I love this time of year when weekend activity on TT slows down a ton...Feels good to know people are out there ripping the glass up!!!

Decided to try smoking salmon today.

Dry brine with equal parts salt and brown sugar
Brined for about 2 hours
Smoked for 1 hour at 225

Little bit of sweetness and little bit of salty. All good stuff.
