i keep half heartedly looking up diesel sprinter cargos with an eye toward combining our tdi vanagon + pickup into a single boat-hauling thing that we could camp in...
im fairly local to one of the bigger canadian tuners (pre covid border closure) so that would be a tempting option

Modern v6 is plenty for what you’re pulling so the world is your oyster as far as what to get.
We’ve had pretty good luck (not perfect) with Audis. The q5 and with the bigger motors are a good light duty tow vehicle that ladies like as daily drivers.
We’ve had a few Audis and they have many little issues with infotainment systems but have been otherwise reliable where it counts in the drivetrain in our experience.

Our Q5 is a 2017 and I have noticed the MMI having some slight glitches, especially with the backup screen. However, my 2019 A5 has the digital cockpit and the updated MMI and I've had no issues with that whatsoever.
When spring comes we'll probably pick up a Q8 to tow the X15 which should be more than enough to get the job done.2012 MasterCraft X15 5.7L
