                  • We started doing this about 5 years ago. It’s the only way to do it! It’s crazy how the dark meat and the white reach different done temps at the same time. You are gonna love it.

                        • Anyone here ever smoke venison ribs? Thinking they could be terrible, but usually we don't do a thing with the ribs except debone them and add it to the pile. I have a method for how I do pork ribs, but obviously venison is going to cook a lot different.

                          • Never tried it. I know your have to do some pre work to keep them from drying out - pressure cooker or boil. They are supposed to be great when right and horrible when not.

                            • Bone-In for the win!!

                              Tested, had both many times, bone-in is the way.
                              Also, you can use the bone as a wiggle test for cooking completion!

                              • Depends where I shop.. sam's bone in... costco no bone.. pulled porked I decided needa injected flavors.. not enough bark to go around. But I am just a beginner
